
26 May Sataras with Quinoa
Hi foodies,
I’ve got a refreshing meal for you today! We have 35 degrees here in France (I know!!), so I made my ultimate meal when in summer time: Sataras! This lovely & yummy meal is refreshing and light, perfect for hot summer days! ๐ โSatarasโ is a lovely vegetarian meal that Iโve been eating ever since I can remember and I absolutely love it! This recipe is: Vegetarian and Gluten-free
Serves: 2
Ingredients:
3 tomatoes
4 Asparagus, thinly sliced
ยฝ Eggplant
1 Zucchini
1/3 Pepper
1 small onion
2 organic eggs
Olive oil, to use
1 cup of Quinoa
1 pinch of salt
Salad:
Leafy green salad
ยฝ lemon
Olive oil
1 pinch of salt
How to make this refreshing meal?
- Cook quinoa
- Chop all of the veggies as seen in the video
- Have fun! ๐
- Start frying onions, zucchini and eggplant. In a minute, add pepper and asparagus. Stir fry these for another 2 minutes, then add tomatoes. Cook for 20 โ 30 minutes
- In between, prepare salad.
- Once 20 minutes is up, add 2 eggs and stir as seen on the video. Cook for another 3 minutes. Add cooked quinoa to the sauce and stir ๐
- Place the tasty meal on plates and add goat cheese
- Enjoy your meal ๐
I love this meal โ itโs such a tradition from my family and it is really easy and light for those hot summery days! ๐ Will you try it?
